  • 8 fresh corn
  • 2 water
  • 2 chopped celery
  • 2 chopped mixed sweet bell pepper
  • 2 chopped sweet onion
  • 2.50 Mrs. Wages® Pickling & Canning Vinegar
  • 1.75 sugar
  • 2 tbsp kosher salt
  • 2 tsp celery seeds
  • 3 tbsp prepared yellow mustard
  • 1 tbsp mustard seeds

  • 1 Boiling-water bath canner with rack
  • 1 Large stainless or enamel preserving pot
  • 1 Canning jars with two-piece lids
  • 1 Headspace and bubble tool

Directions

Canning method
  1. Combine corn and water in a large pot. Bring to boil over high heat. Reduce heat to medium-low and simmer, covered, for 10 minutes. Add remaining ingredients; increase heat to medium-high, boiling mixture uncovered for 5 minutes, stirring occasionally.
  2. Ladle into hot, sterilized jars, leaving 1/2-inch headspace. Apply lids and adjust bands. Process in a hot water bath canner for 15 minutes. Allow to cure in jars for at least 1 week before serving for best flavor.
