A food dehydrator is useful for drying fruit, vegetables, herbs, jerky, and other foods with a tested dehydration method. Dehydrating is a separate preservation method from home canning: it does not make a food safely canned or substitute for a tested boiling-water or pressure-canning process.

What to look for

  • Adjustable temperature: Choose a unit with controls suitable for the specific food you plan to dry.
  • Even airflow: Consistent circulation reduces tray rotation and uneven drying.
  • Easy cleaning: Removable trays and accessible surfaces simplify cleanup.
  • Right capacity: Match tray space to your usual batch size rather than maximum occasional use.

Follow current, tested dehydration instructions for preparation, temperature, doneness, conditioning, and storage. Do not use dehydrator directions as a substitute for a tested canning recipe.
