A boiling-water canner is used for properly acidified or naturally high-acid foods when an authoritative tested recipe specifies boiling-water processing.

What to look for

Choose a vessel deep enough to cover filled jars by the amount of water required by the tested process, with space for vigorous boiling and a rack that keeps jars off the bottom.
