Safety classifications
What each status means.
🟢 Tested
Current recipe or process from a recognized home-canning authority or another high-confidence tested source.
🔵 Tested historical
A historically tested process preserved with source and date context.
🟡 Historical — current safety uncertain
Archival material with incomplete, outdated, or unresolved current safety evidence.
🟠 Untested / rebel
A non-standard method documented for research, culture, or comparison rather than validated guidance.
🔴 Unsafe
A method that conflicts with current home-canning safety recommendations or lacks a safe process as written.
⚫ Insufficient information
The available source does not provide enough evidence or process detail to classify confidently.
What a recipe record should show
Safety depends on the whole process.
Where available, records include processing method, jar size, headspace, pack style, processing time, pressure, gauge type, altitude adjustments, testing authority, safety review date, and source citation. Missing information is not silently inferred.
Historical and rebel canning
Historical and rebel recipes are preserved because they are part of the worldwide record. They are clearly separated from current tested guidance. Where possible, questionable methods include a hazard explanation and a modern tested adaptation.
Popularity is not a safety test
Star ratings, comments, tradition, age, social popularity, or widespread use do not establish microbiological safety. Classification is based on process, formulation, source evidence, and current authoritative guidance.
Safety context travels with the recipe.
Use the record’s classification and exact process details together. A safety label does not replace the recipe-specific jar size, headspace, time, pressure, altitude, or formulation.
