Keep food submerged
The weight should fit the container, remain food-contact safe, and hold vegetables beneath the brine. A leaking bag filled with plain water can dilute the brine, so use only the solution and method specified by the authoritative instructions.
Inspect and clean
- Reject chipped, cracked, porous, rusty, or non-food-grade weights.
- Clean equipment before use and handle it with clean hands or utensils.
- Monitor the ferment as directed and discard it when the tested guidance identifies spoilage signs.
Safe-use reminder
A commercial airlock or glass weight may be convenient, but equipment does not correct an unsafe salt ratio, unsuitable temperature, or untested recipe.
