A boiling-water canner is used for properly acidified or naturally high-acid foods when an authoritative tested recipe specifies boiling-water processing.
What to look for
Choose a vessel deep enough to cover filled jars by the amount of water required by the tested process, with space for vigorous boiling and a rack that keeps jars off the bottom.

Safe-use reminder
Equipment does not make an untested recipe safe. Use a current authoritative home-canning process that specifies the food, preparation, jar size, canner type, time or pressure, and altitude adjustment. Follow the equipment manufacturer’s current instructions.
Before you buy
- Confirm compatibility with your jars, lids, cooktop, and tested process.
- Check capacity, dimensions, replacement-part availability, and warranty terms.
- Inspect equipment before use and replace damaged or incompatible parts.
