A suitable fermentation container holds vegetables, brine, and a cover or weight while allowing the tested fermentation to proceed under controlled conditions.
Suitable materials
The National Center for Home Food Preservation identifies stone crocks, glass, and food-grade plastic as appropriate choices. Food must contact only food-grade surfaces. Do not use garbage bags or trash liners.
Capacity
NCHFP guidance uses approximately one gallon of container capacity for each five pounds of fresh vegetables. Leave the headroom required by the tested recipe for brine, weights, and fermentation activity.
Inspect before use
- Reject cracked glass, chipped crocks, damaged glaze, or deeply scratched plastic.
- Confirm the container is food-grade and can be cleaned thoroughly.
- Choose a shape that accepts a suitable cover and keeps vegetables submerged.
