Clear labels and appropriate storage accessories make preserved food easier to rotate and identify. Mark each jar with the product and processing date, then store sealed home-canned jars in a cool, dark, dry place after removing the screw bands.

Important safety distinction
Vacuum sealing is not canning. Jar vacuum-sealer attachments and decorative or storage lids are for appropriate dry, refrigerated, or frozen storage only. They do not make low-acid or moist foods shelf stable.
Never use a storage lid or stopper for boiling-water or pressure canning unless the manufacturer explicitly approves it for processing and the tested recipe specifies that closure system.
