What to look for
Let juice drain as directed; squeezing may cloud the juice and can change measured yield.

Ultra-fine cotton cheesecloth
Use cheesecloth only when the tested recipe permits it. Layer, dampen, support, and drain it as directed; one layer is not automatically equivalent to a purpose-made jelly bag.

Equipment does not make an untested recipe safe. Use a current authoritative home-canning process that specifies the food, preparation, jar size, canner type, time or pressure, and altitude adjustment. Follow the equipment manufacturer’s current instructions.
