A large nonreactive bowl is useful for mixing fruit, salting vegetables, combining acidic ingredients, draining produce, and holding prepared food when a tested recipe directs.
Suitable materials
Stainless steel, glass, and intact food-grade plastic are practical choices. Avoid reactive bare copper, iron, or aluminum for prolonged contact with acidic or salty mixtures. Replace chipped glass, damaged enamel, and deeply scratched plastic.
Choose enough capacity
The bowl should contain the complete tested batch with room for thorough mixing. A stable base and easy-to-grip rim reduce spills. Do not enlarge or double a recipe merely because a larger bowl is available.
Prevent cross-contamination
Wash the bowl before use, keep it away from raw animal foods, and clean it between preparation steps when directed. Use food-safe covers rather than improvised trash bags or non-food-grade liners.
Safe-use reminder
The bowl is preparation equipment, not a processing vessel. Fill and process jars using the jar size, canner type, time or pressure, and altitude adjustment stated by the tested recipe.
