A pressure canner is required for low-acid foods when specified by an authoritative tested process. It is not the same as a small pressure cooker or multicooker.
What to look for
Choose a true pressure canner of adequate capacity. Follow the manufacturer’s current venting, pressure, gauge-care, cooling, and maintenance instructions and apply the tested altitude adjustment.
Verified product options
Best established stovetop option: The Presto 01781 is a dial-gauge pressure canner intended for compatible conventional stovetops. Verify your cooktop, current manual, and local dial-gauge testing resources before purchase.
Best induction-compatible option: Choose the Presto 01784 when induction compatibility is required, after confirming the current manufacturer specifications and your cooktop requirements.
Model warning: Do not substitute a small pressure cooker, electric multicooker, or unverified generic pressure vessel for a pressure canner specified by a tested recipe. Replacement gauges, sealing rings, regulators, racks, and other parts must match the exact canner model.
Safe-use reminder
Equipment does not make an untested recipe safe. Use a current authoritative home-canning process that specifies the food, preparation, jar size, canner type, time or pressure, and altitude adjustment. Follow the equipment manufacturer’s current instructions.
