Hurryin Hoosiers Corn Relish — Mrs. Wages
Ingredients
- 8 fresh corn
- 2 water
- 2 chopped celery
- 2 chopped mixed sweet bell pepper
- 2 chopped sweet onion
- 2.50 Mrs. Wages® Pickling & Canning Vinegar
- 1.75 sugar
- 2 tbsp kosher salt
- 2 tsp celery seeds
- 3 tbsp prepared yellow mustard
- 1 tbsp mustard seeds
Equipment
- 1 Boiling-water bath canner with rack
- 1 Large stainless or enamel preserving pot
- 1 Canning jars with two-piece lids
- 1 Headspace and bubble tool
Directions
- Combine corn and water in a large pot. Bring to boil over high heat. Reduce heat to medium-low and simmer, covered, for 10 minutes. Add remaining ingredients; increase heat to medium-high, boiling mixture uncovered for 5 minutes, stirring occasionally.
- Ladle into hot, sterilized jars, leaving 1/2-inch headspace. Apply lids and adjust bands. Process in a hot water bath canner for 15 minutes. Allow to cure in jars for at least 1 week before serving for best flavor.
