Rhubarb Berry Conserve — UAF Extension
Ingredients
- 2 cups rhubarb, cut fine
- 1 cup seeded raisins
- 2 oranges, pulp and grated rind
- 3 cups sugar
- 4 cups whole strawberries, raspberries, blackberries, or other berries
- 1/2 cup chopped walnuts
Equipment
- 1 Boiling-water bath canner with rack
- 1 Large stainless or enamel preserving pot
- 1 Canning jars with two-piece lids
- 1 Headspace and bubble tool
- 1 Jelly or candy thermometer
Directions
- Combine the rhubarb, raisins, orange pulp and rind, and sugar. Refrigerate overnight.
- Add the berries and simmer until thick. Stir in the chopped walnuts.
- Pour boiling hot conserve into hot jars, leaving 1/4-inch headspace. Adjust lids.
- Processing: Process half-pint jars for 15 minutes in a boiling-water canner. Yield: about 6 half-pints.
